Erewhon Coconut Cloud Smoothie

Today I’m sharing my go-to post-workout shake, which is actually an Erewhon dupe. This was really popular on social media not too long ago, but I can’t justify spending 20$ on a smoothie when I can make a similar version at home. The blue tint is from blue spirulina, which is rich antioxidants, immune-boosting micronutrients, and promotes muscle recovery. Don’t feel like you have to follow the exact measurements; I feel like the best smoothies are the ones you throw together anyways. You’ll find two versions of the recipe below; one is the Erewhon dupe, including the brands that the store uses. The second is my simpler version, which uses protein powder as a base, no almond butter, and less fruit, making it easier (and quicker) to make. Both taste extremely similar, though - the pineapple coconut flavor overpowers the banana, avocado, and spirulina. No matter which version you follow, I hope you enjoy!

ingredients

Makes one smoothie

  • 1/4 cup coconut cream; Erewhon uses Zuma Valley but it’s more convenient for me to use Native Forest.

    • Stick this in the fridge the night before for the best consistency and results.

    • If you want your smoothie to have a marbled effect in the cup, set aside an extra 1/4 cup

  • 3/4 cup Malk almond milk (Califa also works)

  • 1/2 avocado, can be fresh or frozen

  • 1 sliced frozen banana

  • 1/2 cup frozen pineapple chunks

  • 1 tablespoon almond butter

  • 3/4 tsp blue spirulina; Erewhon uses Blue Majik but it’s easier for me to order Incas online.

    • Set aside an additional 1/4 tsp if you’d like to garnish your cup

  • 2 drops vanilla stevia (for sweetness); you could also probably use maple syrup, honey, or a tiny splash of vanilla extract.

  • 1 packet (2tbs) collagen peptides; Erewhon uses Vital Proteins but I prefer Sports Research.

  • 1/2 cup ice (5-6 cubes)

to prepare:

  1. Use a mixer or hand whisk to whip the coconut cream until it’s light and fluffy, forming light peaks.

  2. Combine all ingredients and blend until smooth.

  3. For the marbled effect, fill the bottom of your cup with the additional 1/4 cup of coconut cream, then sprinkle an extra 1/4 teaspoon of the blue spirulina.

    1. When you pour the smoothie in, it will cause some of the spirulina to splash upwards, creating a more dramatic effect, so don’t worry if it looks like all of the spirulina is stuck at the bottom.

  4. Then, pour the blended ingredients into the cup and serve immediately; the smoothie will lose its texture if you leave it in the fridge for too long.

And if you want a simpler version of the smoothie that has the same effects but less ingredients (and more protein), here’s my streamlined recipe that I use more often. I don’t precisely measure anything, but it still tastes great (and nearly identical to the OG recipe).

  • 1 scoop protein powder

  • 1/2 cup frozen pineapple chunks

  • Small sprinkle of blue spirulina

    • Set aside an additional 1/4 tsp if you’d like to garnish your cup

  • 1 packet (2tbs) collagen peptides

  • 5-6 ice cubes

to prepare:

  1. Use a fork or small spatula to whip the coconut cream until it’s light and fluffy, forming light peaks.

  2. Combine all ingredients and blend until smooth. Set aside.

  3. For the marbled effect, fill the bottom of your cup with the additional scoop of coconut cream, then sprinkle an extra 1/4 teaspoon of the blue spirulina.

  4. Then, pour the blended ingredients into the cup and serve immediately; the smoothie will lose its texture if you leave it in the fridge for too long.
